Easy Potato Bowl with Ground Beef

Ingredients
  

  • 4 medium potatoes diced (Russet or Yukon gold work great)
  • 1 pound ground beef
  • 2 tbsp olive oil
  • 1 tsp sea salt
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • 1 tsp onion powder
  • ½ tsp black pepper
  • 1 cup cheddar cheese shredded

Method
 

  1. Preheat oven to 425°F. Line a baking sheet with parchment paper.
  2. Dice potatoes into ½-inch cubes. Toss with oil, sea salt, garlic powder, and smoked paprika.
  3. Spread evenly on the baking sheet and roast for 25–30 minutes, flipping halfway, until crispy and golden.
  4. In a skillet over medium heat, brown the beef. Drain excess grease (if desired). Season with onion powder, salt, and pepper.
  5. Add the potatoes into your skillet and mix with ground beef, and sprinkle with cheese.
  6. Place skillet under a broiler for 1–2 minutes to melt the cheese.
  7. Top with favorite toppings and serve.

Notes

  • For extra flavor, sauté onions or peppers with the beef.
  • Add a fried egg on top for even more protein and richness.
  • To keep leftovers crispy, reheat potatoes in a skillet or oven
